(I accidentally started eating before remembering that I wanted to photograph the food!)

Plant based crab cake with cajun remoulade sauce & black-eyed pea relish AND roasted yam & quinoa salad (spring mix, almond slivers, dried cranberries, pears, lemon vinaigrette)

We found a great coffee shop before leaving the city of Edmonds: Walnut Street Coffee. They had Mighty-O (vegan) donuts and vegan cookies! Todd only tried a bite of each, which meant more for me!

THE VERTICAL DINER
SALT LAKE CITY, UTAH
We absolutely love this all-vegan restaurant: The Vertical Diner. Located in Salt Lake City, Utah, they have two locations. During our Snowbird Trip 2018, we dined at the location with this address: 234 W 900 South. Here is the link to the menu.
MARCH 31, 2018
Our first stop at the diner was on the way to Snowbird, UT.
Eric ordered the Ziggy Marley burger (cali burger with jerk ‘chicken’, pickled jalapeños, and ranch) on a 7-grain bun, with a side of chili. His drink was the Bloody Sunday.
I ordered The Vertical (tempeh) Reuben with a side of mac and cheese, and a Thom’s Mule to drink.
I ordered plain pancakes for Todd. He wasn’t hungry, and he was more focused on playing with his new Hulk toy. Eric and I enjoyed the ‘cakes the next morning!
APRIL 3, 2018
Our second stop at the diner was after swimming at the Fairmont Aquatic Center.
Eric ordered the buffalo style Breaded ‘Chicken’ Ranch Sandwich (with tomato, lettuce, and onion), with carrot sticks. This one is spicy!!
I ordered the Mountain breakfast (i.e., mountain of hash browns, tofu scramble, grilled peppers & onions, guacamole, cheese sauce, and tempeh bacon) and an extra side of carrots.
Todd had french fries. This time he was hungry, so he ate most of them.
We can’t wait to return!
