THE VERTICAL DINER
SALT LAKE CITY, UTAH
We absolutely love this all-vegan restaurant: The Vertical Diner. Located in Salt Lake City, Utah, they have two locations. During our Snowbird Trip 2018, we dined at the location with this address: 234 W 900 South. Here is the link to the menu.
MARCH 31, 2018
Our first stop at the diner was on the way to Snowbird, UT.
Eric ordered the Ziggy Marley burger (cali burger with jerk ‘chicken’, pickled jalapeños, and ranch) on a 7-grain bun, with a side of chili. His drink was the Bloody Sunday.
I ordered The Vertical (tempeh) Reuben with a side of mac and cheese, and a Thom’s Mule to drink.
I ordered plain pancakes for Todd. He wasn’t hungry, and he was more focused on playing with his new Hulk toy. Eric and I enjoyed the ‘cakes the next morning!
APRIL 3, 2018
Our second stop at the diner was after swimming at the Fairmont Aquatic Center.
Eric ordered the buffalo style Breaded ‘Chicken’ Ranch Sandwich (with tomato, lettuce, and onion), with carrot sticks. This one is spicy!!
I ordered the Mountain breakfast (i.e., mountain of hash browns, tofu scramble, grilled peppers & onions, guacamole, cheese sauce, and tempeh bacon) and an extra side of carrots.
Todd had french fries. This time he was hungry, so he ate most of them.
We can’t wait to return!
3 YEARS OLD…MONTH 7
FEB 21, 2018 – MAR 20, 2018
TODD SAID…
- “Yes, sir” & “Yes sir, Dada”
- “Yes, indeed”
- “This is the iss” (he says it a lot, but we don’t know what it means)
- “Let’s try that”
- “Go out there in sixty minutes” (to the living room)
- “You is happy and cute” (he said to me)
- “I love you” (he said to me out of the blue)
- “Couple tumors on the side” (he likes to repeat this phrase but we have no idea what he’s talking about)
FAVORITES THIS MONTH
- Books: The Gruffalo’s Child, Grandma’s are for Giving Tickles, Grandpa’s are for Finding Worms, Thomas Comes to Breakfast, Bath Time for Biscuit, The Incredible Hulk (Little Golden Book)
- Movies: How the Grinch Stole Christmas (2000), Peter Pan
- if I failed to mention he is a huge Star Wars fan in previous posts, let it be known now! (since shortly after he turned 2)
- he likes Cindy Lou Who
INDOOR ACTIVITIES
- open gym at the gymnastics gym every Monday
- preschool Tuesdays & Thursdays
- he loves doing light saber fights & role playing to reenact the Star Wars Duel on Naboo scene
- he said:
- “Let’s trange” (when he wants us to switch lightsaber colors and switch roles…Qui Gon, Obiwan, Darth Maul)
- “I am not Todd, I am Hulk” (he says in his Hulk voice)
- “I am back to Dr Banner” (in a normal voice)
OUTDOOR PLAY
- playgrounds & parks
- playing outside (weekday afternoon/evening)
- laughing hysterically because another kid kept kicking his foot to make his shoe fly off (and it actually ended up in a tree) (3/19)
DEVELOPING SKILLS
- he recited the whole alphabet
- he told Eric not to throw the laundry basket on the floor
- he said:
- “Sorry” (for throwing a cup) (this was the 1st time (3/4/18) that he said sorry without us asking him to do so)
- “It is new move: big sit down” (jump & land on his butt on the couch)
LEGO LIFE

- New Legos: Hulk Lab Smash; Marvel Super Heroes Hulk vs. Red Hulk.
- he doesn’t like to ‘mix’ sets when he plays with them
- he repeatedly reenacts the Duel on Naboo scene with the Lego set of the same name
- he said:
- “Me is reviewing the set like Jangbricks reviews the set”
- “First start off with the ____” (when he reviews Lego sets)
- “Wait, Dada, this goes with Luke” (when Eric purposely put a Lego Luke head on a trooper, covered by trooper’s mask)
A NIGHT APART
- We had to Face time because I went to Seattle for a conference (3/8, 3/9)
- I sent them a picture of the cookie I received (upon check-in at The Camlin Hotel) & a video clip of my room
- Eric texted:
- “Todd either wants to go to that condo house with mama or mama just brings home some cookies”
SKIING – MISSION RIDGE
- the 3 of us skied together 3 times (2/24, 3/3, 3/11)
- Eric & I skied together while Todd spent 2 hours in the MR daycare (3/18)
- he does “Hulk bash” at the rope tow
- skiing on the reins (all chairs)
- he loves puddle jumping
DUMMY DOWNHILL
- instead of skiing this day, we attended the dummy downhill (at Mission Ridge) after Todd’s nap (3/17)
- Todd’s favorite part was climbing the snow slope
SKIING – STEVEN’S PASS
- Eric & Todd skied & rode magic carpet (2/28)
- the 3 of us skied & rode the magic carpet (3/9)
HIKING – SADDLE ROCK
- we hiked most of the way up the Saddle Rock trail (3/4)

FOOD NOTES
- he tried avocado for a sticker
- he ate applesauce with a spoon
- he likes Chao (vegan) cheese (who doesn’t?!)
- he asked to go to “Taco Mar” (Taco Del Mar)
HEALTH & MISC
- he climbs on my lap a lot (on the couch & while reading books at bedtime)
- he said:
- “Me having another itching day”
DAY TIME NAPS & NIGHT TIME SLEEP
- naps: status quo
- he went through a stretch of sleeping through the night that lasted ~2 weeks but other times he wakes up asking for Goppa
- he likes to “sleep with” Lego sets
- he said:
- “Me is just loving you” (at bedtime when I told him to stop squeezing my nose)
- “Dada, is mama here?” (when I was away from home for 1 night)
POTTY TALK
- status quo: potty trained except for wearing diapers during naps & night
- he wears a diaper for skiing but they’re always dry
- he said:
- “Me really had to go. Me not touch my poo-poo” (sitting on the toilet)
