MAPLE CAKES
Is it a cookie? Is a cake? Is it both? These vegan Maple Cakes are a little bit crispy on the outside but fluffy and soft on the inside. They are just sweet enough! You can whip out this recipe quickly because the quantity is perfect for just one cookie sheet. I made these for my three-year old and he said, “Mmm, good!”
DRY INGREDIENTS
1 C + 1/8 C all-purpose flour
1/4 t each: baking powder, baking soda, salt
organic cane sugar for sprinkling
WET INGREDIENTS
“Flax egg”: 1 T ground flax + 3 T water
1/2 C pure maple syrup
1/4 C + 1/8 C Earth Balance
1/2 t vanilla extract
ASSEMBLY
- Mix your “flax egg” in a small bowl and set aside for a few minutes.
- Combine the flour, baking powder, baking soda, and salt in a medium bowl.
- In another medium bowl, mash the maple syrup into the Earth Balance (lumps are okay!).
- Add the vanilla and flax egg to the maple syrup mash.
- Combine the wet and dry ingredients (except the sugar for sprinkling).
- Use a regular spoon to scoop little batter balls onto a parchment-lined cookie sheet, then smash them down somewhat. It should make about 20.
- Sprinkle a little bit of organic cane sugar on the top of each before baking.
- Bake at 400 degrees for up to 15 minutes (depends on your oven).
- Move to a wire rack about a minute after they come out of the oven.
- Serve to three year old after they cool off a bit!
AUTUMN TRIP TO THE BEACH (OCEAN SHORES, WA)

Todd’s first trip to Ocean Shores (8/10-8/15) must have been memorable, because he kept telling us he wanted to go back after we got home. At first, I figured it wouldn’t be until next Spring or Summer, but then I thought, “Let’s make it happen sooner!” I scheduled a personal day and off we went…
FRI OCT 20
We hit the road right after I got off work. Before the trip, I looked up vegan pizza options in Olympia, WA, and I found Vic’s Pizzeria (Westside location). Right on the menu they have Vics Vegan Calzone (“Vics Red Sauce with choice of Yellow or White Vegan Sauce, Spinach, and your choice of four toppings”). We didn’t order the calzone on this trip but I do want to try it next time. We did have some of their homemade vegan cheezy sauce on our pizza. The whole thing was delicious!
SAT OCT 21 – MORNING
This was a very wet and rainy day at the Damon Point beach…which suited Todd just fine since he loves to get his feet into water of any kind. He found puddles in the sand…cool! He thought it was hilarious when my sneakers sunk down like quicksand near that rock…
SAT OCT 21 – EVENING
In the evening, we visited Darren (Eric’s brother) and Sandie. Todd started off by doing some drumming with Sandie’s drum set.
Initially, Todd was a little nervous about the dog, Stella, but pretty soon they were great friends. Sandie instructed Todd to give Stella a toy so that she would drop the ball. Then Todd brought her every dog toy she has. Todd had so much fun trying to get the ball from Stella and then watching her go after it.
SUN OCT 22 – MORNING
We went back to the beach at Damon Point on Sunday. This time it wasn’t raining. Jeff (Eric’s brother) joined us, and then Darren and Stella showed up later. After playing with a stick that he called his Darth Maul lightsaber, Todd was set on splashing in the waves like we did in August. Devoted mama as I am…I chose to sacrifice warm, dry feet in order to make some more memories. According to him, none of the waves were “big enough,” and he could’ve splashed in those waves all day (Brrrrr!!!). Eric took some nice silhouette pictures.

SUN OCT 22 – AFTERNOON
During Todd’s nap, Eric and I took turns going for a walk on the beach. Eric went with his dad. They snapped some pictures together and then Eric filmed the wind pushing against some beach foam. When they got back, I went for a brisk 30″ beach stroll to get some much-needed exercise! Finally, Eric’s mom made a pizza that was out of sight!
MON OCTOBER 23
We drove home and stopped at Thuy Pho for lunch and Casa Tapatia for dinner.
